If I was the last man alive, I wouldn;t be the last hope for mankind. All the sperm banks can't be empty? and surely all the male sperms haven't been killed off.
(I read the first few, so have no idea if this has been thought through in them)
I would go explore the places where I know I couldn't now, and travel the world. i/e pentagon, fort knox, etc

i assume the last man would be like a cow, he would be in a government facility and basically be used solely as a way to reproduce the planet, it would be a sad, lonely, miserable life....sooooo yeah
If I was the LAST Man of Earth....good question.
I do some of the things that society would not permit me to do (walk naked in public or in stores - personal I know....but have any YOU thought about, smash somethings, burn a few minor stuff, 'borrow' some things from other people), destroy all forms of drugs, be admired by all women (UNLESS there are women who want to kill MEN - Like AMAZONS) and spend some time them to figure out which one(s) I love....

Honestly, I'd go nuts at the thought. What's the point of being able to pillage and steal everything in Earth if you don't have someone to share it with?
But I will admit that the fact that I may be the only hope for humanity to renew itself does sound tantalizing, even egotistically delicious.
Being the last of your gender only matters if you enjoy hanging out with people of your own gender. These days there are many guys who have only female friends, and many girls who have only male friends. Would it then be the case where there are only females/males left? That wouldn't be much of a plot, in my opinion at least. The guys would have sports and comics, while the girls would go frilly and lacy.
