By no means an easy list to construct.. and one that will change frequently in my continued reading, but now that I've amassed a healthy amount of EU knowledge I think I can go about creating the list of all lists.

If you know me, you know there couldn't be another choice for the number one spot. The first character in the EU I truly took an interest in. He's stuck ever since.
Shame he died at Naboo, though.

Vos is one of the true heroes of the SW universe, but more in a behind the scenes kind of way. I find him intriguing because of the way he manages to survive whilst being torn between the Light and Dark sides of the Force at every turn. The Dark Side became his burden from infancy, and the Light is what he looked towards whenever his hope began waning.
He's the original. The template for the Clone Army, the guy who taught Boba Fett everything he knows.. warrior, father figure, badass. Nothing more to say, really.
Classic Jedi redemption story right here. Ulic is an inherently likeable character who fell and got back up. Not much else to say really, he's great.
Malgus is who I would want as my head of command if I was in the army. He is war incarnate, and in a way I share some of his views. The human race can only gain strength through conflict. We live to suffer, and through suffering we really live in a way that is truly significant. Facing our fears and anxieties head on in order to master them and become stronger individuals. Violence is one of the most natural and primal aspects of human life - the want to be violent, the fear of violence, the times where you NEED to be violent. Malgus strives to become the best version of himself through violence, and he shares the same goal for the Empire as a whole. I can't say he did a bad job of actualizing these goals, because the guy is an absolute machine.
Also, Malgus isn't a dick to aliens, which is always cool.
Yeah.. well.. he's like... badass.. so... not much to say here.
Pretty unique character, the guy who gave Darth Maul the saberstaff. Cunning, manipulative, powerful and legendary in every sense of the word.
Simply put, he's a walking nightmare. Once he was a bloodthirsty yet noble warlord who sought to fight for his people and his planet, but ended up being twisted into something far more scary, and far more powerful. He's a tactical genius, unique and skilled lightsaber combatant, physical powerhouse and overall the full package when it comes to a great villain.
When you disregard what Lucas wants him to be. Lucas isn't good at this kind of thing.
Krayt starts off as a fairly unremarkable dude during The Clone Wars and goes on to become one of the most powerful, unique and successful Sith to exist, even starting and successfully leading his own unique Order of [One] Sith, taking over the galaxy, nearly exterminating the Jedi, and leaving behind a Legacy so strong that his followers remained self-sustaining in his death. He also created what is potentially the most fearsome Force-sensitive based land and air army to exist; the Sith Troopers. He's come over incredible odds physically and mentally, overcame death and only truly died once and for all when his body was sent into a sun and his Force essence was left to dissipate into the Cosmic Force, which kind of sums Krayt up; someone who you can't stop unless you utterly obliterate him.
He's a character I like for similar reasons to why I like Vos - he's an underdog, who has gone through terrible experiences, has a realistic moral outlook on the world, and in the end, ended up doing the right thing and redeeming himself. That, and he's powerful, which is always enjoyable in a character. I would go as far as to say it's important for a character to be powerful, for me anyway.
