I don't think Fisto's fight with Grievous is really indicative of Grievous at his peak. Grievous was noted at that point to need his rest due to previous injuries and cybernetics changes, and Grievous was also noted to keep upgrading his cybernetics during the course of the war, not to mention continuing to train with Dooku. IMO you can also see a progression in his abilities through the clone wars.
