I think you misinterpreted that feat. Here's what it said
It say it is only as bright as a class 6 star. It only reverse to the brightness. Look how small the star is, it is a smaller than a planet. This isn't a real star. And Rosalina is refering to one of those star collectibles. Not real stars. Real stars are classified by letters not numbers.
Yeah Rosalina is not refering to an astronomy chart, stars are not classified by numbers but by letters. I'm not going to give an astronomy lesson here but just look at this link.
I don't know what's up with you and size. Smaller doesn't always mean weaker. Also if you look at the exact link you posted you'll see stars are classified in multiple ways. In fact there's a graph on that exact site relating to brightness using roman numerals.
However where as the letters you speak of relate to heat. The brightness of a star directly relates to the energy one has.
Luminosity is the total brightness of a star (or galaxy). Luminosity is the total amount of energy that a star radiates each second (including all wavelengths of electromagnetic radiation).

So not only was i(or Rosalina more precisely) indeed referring to a class 6 star in terms of the energy that star had, those stars that you indicate as not being powerful because they're small, are proven as energetic as normal stars, more or less, because they're bright enough to illuminate the night sky from light years away. As for this:

You're going to tell me what Rosalina is referring to? Are you going to ignore the fact that the star in the scan looks nothing like the star you posted a pic of, or the fact that's the never any mention of scaling power stars on a numeric scale the entire game? Besides that I already answered that 2nd question in my first post.
Besides Bowser's own incredible amount of power, to battle Beerus in the most effective way, he quickly and efficiently gathers great cosmic energy in one of it's purest and most potent forms, stars.
However these mini stars aren't his only source of energy from the Universe. This very location is home to a vast amount of the magical power and Grand stars
He sucks up stars(the ones you called small, but have enough energy to illuminate from light years away) within seconds. The battlefield has enough power and grand stars to create a galaxy. Already went over this, however, if Bowser doesn't deem this as enough he's stolen Power stars and grand stars within a single days times.
1-2: Bowser steals Rosalina's power stars twice within a days time each(the comet is her ship)
3: Bowser steals a space traveling Luma crews power stars with ease within days.
Bowser already has massive resources at his command at the start of his prep, he can acquire more in mere hours at max. That's if he deems it necessary.
That is the galaxy reactor. Did Bowser ever actually create a galaxy with it? Secondly we don't know how many stars Bowser used to create this galaxy. On top of that for Bowser to utilize this power he needs create a giant planet sized machine, He didn't do this in a days time. While here Bowser only has a day of prep here. he just doesn't have the time to pull this off.
Also he uses the power for creation. You need to prove that he can use it for destruction as well because creation won't help against Beerus.
You are going to have to prove that he can manipulate stars with a dream stone.
Firstly, the battle takes place at the galaxy reactor(generator was SMG 2). But to answer your question, Bowser already had created the galaxy, he was referring to his empire more than anything.
Rosalina asks if Mario is ready to go to the center of the universe to fight Bowser and is seen flying to the center of Bowser's Galaxy. And yeah, Bowser's going to be using his power of creation to create shields and lasers casing a suitable platform using the dreamstone... which, I don't know why the dream stone wouldn't be able to manipulate the power stars and grand stars:

It's main use is as a fuel for interstellar flight, however it also seems as if any interstellar ship can use it as such, as Bowser, Rosalina, and Lubba's Luma crew can all use it with their own unique ships. However, Bowser is known for using the Power Star Energy in more aggressive ways:
For example, Bowser's Gravity Gauntlet is filled with standard Bowser Galaxy things. You know, gravity shifting at an abnormal rate, lava that's being shifted by said gravity, and a couple of miniature black holes for the heck of it.
He's also used the energy to create a dark matter Plant filled with dark matter and a star reactor filled with... well stars... Anyways, none of these are power feats. Just showing off the incredible versatility as a fuel source. Now I know i can't provide direct proof of the Dream Stone manipulating Stars for an energy source, but I don't think i need to. Speculation or not, a reality warping artifact that makes wishes come true and things appear from thin air amping it's abilities using one of the most versatile energy sources isn't far fetched. In fact complete opposite, it's almost self evident. As is most of the other things you contend.
This is my bad, I didn't look at the scan properly, you are right. After looking at it proper the things being sucked in are meteoroids at best. None of them look like planets at all. Now even if you do count them as planets , that still wouldn't put them at Solar System level as you claimed. That would be multi planetary.

Now, you're claiming that because they're just planets it doesn't count as a solar system because of there being no suns. However, I think the implications are pretty clear. And I'm backed up by other information surrounding the feat.
- At close range we see an easy to spot Planet and sun right away.
- In the background of Bowser's Jr's fight we see more planets and suns in the distance
There's a good amount of celestial objects surrounding the Bowser Station, however once the battle is over with, the only things left are is a bit of asteroid debris and the mini stars platform which Bowser wanted protected and safe for personal use.
Sorry I don't know if I can't see the scans or not. But I didn't see any black holes that were destroying his galaxy generator. Which isn't galaxy sized.
OK that is a huge stretch li,e extremely huge. The light in the back does not equate to stars I don't see how you get that from at all. It could be actual light since a black holes suck light. But there is absolutely nothing to suggest that light in the back are star. That is ridiculous.
I'll put to rest those other things right away, but before that, who says his Galaxy Generator isn't Galaxy sized?
In fact if you look at the above scans, every Bowser Galaxy states this... I already showed you the Galaxy Generator was bigger than other Galaxies. In fact... it's called a Galaxy Generator, I would hope it was big enough to generate Galaxies. And the black hole he summoned definitely destroyed it... Where would you consider it to be after Bowser gets ko'd?

Not too mention Rosalina's "Comet" had literally been eaten right before the battle, yet arrives afterward just fine:
This is only to prove the Galaxy Generator was destroyed, Rosalina's ship flies faster than light and can escape a black hole, she couldn't however escape the Galaxy Generators Pull. So what makes the white dots in the background so unbelievable that they're stars. He had literally just caused Galaxy wide destruction... how are stars unbelievable? Especially when a smaller Black Hole left a Solar System devoid of it's suns. Speaking of Black holes and faster than light travel...

As for Bowser being FTL, that is kind of using game mechanics. That would mean everyone during that little dice games they were playing are light speed as well since they were able to avoid the pull of the black hole. It's just simple game mechanics. If he was really FTl he should have been able to just fly out like this
The fact that he couldn't escape should prove that he is probably at light speed not FTL. Even if it was an FTL. I would say it of a travel speed than combat speed, he can't react or dodge at FTL speed or he would have been able to avoid the meteors.
Wow... this is a pretty horrid attempt at lowballing, your other attempts were pretty decent, this one, meh. I don't even know what you mean by game mechanics. Mario Party 9 is mario party 9, Mario Galaxy 2 is Mario Galaxy 2. So two different sets of game mechanics. I don't even think you can attempt to argue away the main gimmick of the final battle of a game as just game mechanics. So you're saying that if it wasn't a game Bowser wouldn't have accomplished the feat? Bowser was trying to kill Mario, why would he just fly out? And how is it not combat speed when he was throwing his fist? Heck he's fighting within a galactic black hole's Event Horizon. Not reacting to meteors coming at around light speeds getting pushed faster by Mario doesn't really prove he doesn't have at least ls reactions. And the only reason he doesn't escape is because Mario knocks him out:
What? Why would he cause a Black Hole that he couldn't escape... especially when he shows the ability to rotate against the force of it. Anyways, even if you consider Bowser's base FTL combat speed slow, or his reactions unfit, he could always just push himself faster:
- A time machine using the Cobalt Star as a powersource
- After absorbing it's power The elder shroob Princess was able to open time holes
- After eating the Elder Shroob Princess Bowser went from being slower than Mario to fast enough to never let them attack.
Now because not much is known about the cobalt star, I can't exactly say it's any such technique as maipulating time relative to himself. However it does amp his already ftl combat speeds. As for your other concerns regarding the matter of speed:

To both of these things. Says who? you? Everyone always says Dragonball was ftl by frieza saga or some such, yet Solar flare was still an effective attack up to Cell saga:

However all of this is irrelevant due to power scaling in the first place. As well as the composite Beerus already has an impressive speed feat in the form of dodging champa's energy attack. Now that Bowser's Ftl combat and tech reaction speed has been backed, let's get on to his strength:
I'm sorry but that doesn't really constitute as a planet. I mean that is an extremely small planet. And you even admit that it has some sort of toonforce behind it. So this isn't the best way to prove his strength. On top of that he didn't even destroy the planet, all he did was make craters. None of that equates to planetary strength in anyway.
Hmm. It's actually a multi-planetary feat. See even being small these planets are calculated as being as dense as a white dwarf star:
This is an actual research paper done concluding that the planets would be nearly as dense as white dwarf stars... which is the only reason the feat has any toon force behind it because the planet should be destroyed from that simple fact, ignoring that you can't just write off the physics of a character. And this is considering the average planet in Mario Galaxy 2, the meteors were even smaller:
Yet Mario was able to walk on them fine, indicating that they're even denser than the white dwarf star planets, Yet Bowser can crush two of them like they're pebbles or as I've previously shown knock all three of them into the sky. He can also tank these attacks, proving his consistent planet+ durability. However at this point that level isn't even worth mentioning, Bowsers Durability is far beyond that:
1-2: Bowser gets sucked into the solar system black hole and comes out unscathed and ready to cause more havok
3-4: Bowser gets sucked into the galactic black hole and only comes out ko'd and smaller than usual. He's still able to tank hits from Mario who's a building buster at base.
Bowser's intense star level+ to Solar sytem+ durability is going to be what keeps Bowser in this game. Even if Beerus is faster(which... ftl is ftl imo so I don't believe he is). Bowser has the durability to tank his attacks all day. The Great part is he can amp it even further using the star rod
1-2: Bowser explains the star rods power and uses it to become invulnerable
3: Takes the magic power of 7 star spirits to remove the field of invulnerability.
The star spirits being basic powerhouses who can stop time, transmute beings into stars, have a couple aoe attacks, and allow for healing. Yet even when all of their power was combined it wasn't enough to take down Bowser when he amped himself using the power platform:
