I think it's not as bad as it seems. While I do personally favor Katakuri, Magellan's abilities are incredibly dangerous for him.
Magellan's poison's scale and potency should be enough to pressure Katakuri immensely at any given point, Katakuri will need to abuse his Awakening to match things like the Venom Demon, and he'd have to stay on his toes to avoid it since even with Future Sight he can't just morph around large-scale attacks the way he could with Luffy's fists.
Magellan's poison has the advantage of being deadly on touch, corroding through material and since the poison doesn't just go away IIRC, it will make Magellan a growing threat throughout the fight, especially if Magellan's liquid poison can follow the Devil Fruit submergence rules and drown Katakuri.
While Katakuri has CoA, which should be able to resist poison by everything we know, I don't think Katakuri can cover his whole body or Awakening in Haki? Anything not covered in Haki will be subject to Magellan's poison melting it, including Katakuri himself, so when he inevitably gets close enough to hit Magellan, he runs the heavy risk of being hit with poison. Making himself larger with his Special Paramecia abilities might just be worse in that sense. We already know that Haki alone isn't enough, since Jinbei has Haki and he clearly couldn't have beaten Magellan on his own; Katakuri is way better than Jinbei of course, but the point still stands.
Again, I support Katakuri winning, but I don't think it would be easy at all, and Katakuri runs the risk of dying if he isn't extremely careful.
I see your points but I honestly don't see what would stop Kat from instantly blitzing and one shotting Magellan. His durability isn't all that from what we saw and Kat scales to gear 4th so he should be able to one shot. He shouldn't need to coat his entire body in haki, just whatever part makes contact but I'd imagine he probably can if he wants. Overall Kat has the tools needed to end the fight easily and while Magellan may be a dangerous opponent if you're not careful, Kat is the least likely opponent in the verse for him to catch of guard. Fs just makes it one sided imo.
