All ghouls, though resistant to damage from man-made objects, are vulnerable to damage or modifications made to their mucous membranes, such as nostrils, eyes, ears, lips, as in Uta's case.[16]
Also, a Ghoul will die if decapitated. This is most likely due to Ghouls, much like humans, being highly dependent on their brains for a variety of critical biological functions, though this is yet to be confirmed.:
I think it would be fair to say a well placed blow to the eyes/bridge of the nose could destroy Kanekis brain ending the fight, i would give Kanekis durability more thought if he wasn't fighting Wolverine and his claws, why discuss who wins if were just going to say the ghouls are invincible to non-ghouls, crossovers need help when merged for a battle. A fair middle ground IMO would be Wolverines claws can't slice cleanly through most areas(but they still cause scratches and in some cases gashes) but they will cut through weaker areas, just like Kaneki could hit Logans vitals if aimed correctly.
Wolverine has low level superhuman in the 2 ton+ range, Ghouls have high physical capability and are four to seven times stronger than the average human(Wiki), Wolverine is probably at least twice as strong. From the fights i saw it appears as though Wolverine could at least keep up with Kaneki, at 5 ft 3 he is already a small target, in his crouched stance he might be as short as 4 ft and balled up which would shrink that target more so, this would help with the speed/agility difference.
I think it's a pretty even but Logans fighting experience would win the fight for him, he been fighting for a century. Multiple wars, world wars, super mutants and metahumans of all ability levels, ninjas, samurais you name it. Kaneki has flashier, better abilities it seems but it appears he still needs to get close. Also nothing will come at Logan that he hasn't seen a dozen times before in one way or another.
