Depends really on what mod I'm in. Sometimes plot other times action.
Inyuasha is my favorite I watch it for all of the above.
Others for various reasons
It depends on the series, but as an overall statement, I really like the different techniques and styles of Japanese storytelling (not just plot, but characters as well). They're over the top to some, but they're extremely dang memorable because of it.
And no Western show can match the absolutely nuts adrenaline of a good anime fight.

Depends on the series
Naruto- story,plot, characters,etc
One piece- world buliding, characters, other crap
Fairy tail- fun, characters, other crap
DBZ- fighting, fighting, fighting, asspulls
other series- other crappy reasons
Originally it was because of the action and sometime for the "plot", now is the same reasom I watch cartoon, for entertainment.
I mean granted I do feel like there are more variety in anime then cartoon, with some good slice of life, moe, fan service, gore, and over the top action series. With cartoon, the two majority of shows I like are either adult comedy, or fun kids shows that try to appeal to adult also with their imagination.
Luckily action shows are still prevalent with the return of Samurai Jack and Voltron in Netflix, but most western cartoon action sucks like the marvel animated shows and Troll Hunter which seem to aim more toward kids a bit too much at time and are generic as hell.
Granted most anime don't have the same magical adventure of child wonder that makes you feel like a kid since most "kids" shows in anime are either aim at teenager or suck with some exception like Little Witch academia.

@life_without_progress: I've seen Samurai Jack, and while it doesn't quite hit the heights of the best anime fights I've seen, it's definitely a good contender at times. Really gotta watch the whole series at some point.
Those videos make it looks like Season 5 made some improvements :) one of the biggest complaints I had with the original series was the amount of dead space. They see to have toned that down here.
Death not, all the way through excellence, great story, loads of unexpected plot twists. I can go on.
Number 1 thing for me is anime are actually cartoons for the most part, not cgi (poorly made or not) or animated wastes of time like most all western "'cartoons" are now.

One piece - world building and adventure
Tokyo Ghoul and Attack on Titan - character, gore and action.
Death Note - Character and plot.
If I watch anime or read manga it's always for the plot. I am not a big lover of stuff like One Piece. I'm sure the characters grow on you but I just can't deal with that stuff. Rather my Death Note, Code Geass ect...
Because I really like the cool factor on some animes, they are too cheesy and over the top but thanks to that when they pull it off properly then it really pays off.
There's also the amazing soundtrack and animation that can make anime fights so cool, on the best ones at least... and finally I love inner dialogue/monologuing when done properly, that shiz when they are fighting and acknowledge each other/ think of every possible move they will do, etc. (Oh and I like edgy stuff I admit it lol) Each anime has it's own strenght anyway, can't say I liked them for the same reasons.
Like above mentioned, One Piece has one of the best and most consistent world and hype building for such a long running constant story. Death Note for the mindgames, twists, tragedy, morally ambiguous characters, Naruto for the fancy ninja action stuff and some feels, until they ruined it during the war arc (RIP). Hunter x Hunter because it's a masterfully done twist on the typical action anime. Berkserk for amazing art and a badass visceral and mostly well written story, OPM because Madhouse studios are madmen and animated every fight scene with love like their life depended on it, etc.
