Wednesday Comics is so amazing and I've scoured the internet looking for a good comic like it but alas, I have turned up with nothing.

Does anyone know a good graphic novel that is huge like Wednesday Comics?

Yeah, I liked Wednesday comics(If you mean the DC anthology) too. It was the variety I loved from it. Personal favorite The Metal Men.

The reason that not more like it exists is because I think Wed Comics didn't sell. And I think some didn't even like the changes. I could easily be wrong though. But it was so good. I love the newspaper strips style they went with it.

George Sprott, The Sixth Gun Deluxe Edition Vol. 1, Hellboy Library Editions, Parker Martini Editions, IDW's artist's editions and things like Little Nemo, Krazy Kat, Popeye and Prince Valiant are worth looking into since they did inspire the format.
