In The Avengers, Loki comes to Earth as a pawn of Thanos' and uses the tesseract to open a portal to allow the Chitauri army to come and I guess conquer the world. But we learn in Infinity War that Thanos' goal for a very long time (and before The Avengers) was to collect all six Infinity Stones so he can wipe out half the universe. Loki took possession of the Space Gem in the first five minutes of the film; so what was the point of the Chitauri invasion? Is there a reason why Thanos wanted to wipe out or control soem random planet when he could have just take the stone and made things so much easier for himself?

I don't think Thanos wanted to have Loki take over Earth. Loki said he wanted to do it to rule over humans as a god, which is something that is in character for him, I don't think Thanos made him do that.
But also the Chitauri was given to Loki to help fight the Avengers. Loki knew they wouldn't just let him take the stone.

I think Thanos grand strategy was get all the stones on Earth so that it would be easier to collect them all at once. It seems like it's more than a coincidence the space stone, mind stone, time stone, reality stone were on Earth at some time.

That's fair, actually.
Thanos also wanted to wipe out half of earth. You saw in infinity war how Thanos divided Gamora's people into 2 groups and executed one side? That's what he's been doing to a bunch of other planets throughout the universe. It stands to reason that had he conquered earth, he would have rounded everyone up and executed half of them.
The infinity stones was a long game. Thanos couldn't go for the stones himself until he knew the location of the soul stone, because everyone in the universe would gang up on him. He would have just gotten 5 stones, and be stuck in an endless war with everyone in the universe. Him watching the recording of Gamora talking to Nebula how she found the map to the soul stone was what prompt him to move in Infinity War. So to avoid raising suspicion, he got Loki to take possession of the space stone for him.
As many others said before me Loki had his own agenda. Also 4 of the six stones were on Earth so conquering Earth would have been huge for Loki
The Other stated that they underestimated the humans in the end credit scene. I bet Thanos thought it would be literally impossible for any human to be able to take down an asgardian God with the Mind gem and the Chitauri army. Probably just a bit of cockiness on his part.
He has also been shown to be a man of his word. He was going to destroy Xandar for Ronan, he was going to let Loki rule earth, and he spared Tony’s life for the Time gem. He probably likes helping out other people, because he compares their goals with his.

It's characterized view of Loki thinking humans are inferior to Asgardians therefore Asgardians should rule the Earth but neither his brother or his father wanted him to do that . Btw MCU Thanos was not Thanos(Marvel Universe) who has that madness of killing people will eventually succeed in winning his Lady Death's heart ........
In short MCU Thanos's character didn't clearly demonstrated his background not only due to it's inconsistency in each cameos of several MCU films but his background just doesn't make him the Mad Titan ...Only Brolin with his acting skills brought life to it's character

The Soul was on Vormir, but wasn't the Reality with Malekith?

The Soul Stone was on Vormir, Reality Stone was given to the collector after Thor: The Dark World. The Power Stone was on a planet right before GoTG.
