Ive seen the older star wars movies forever ago and ive seen phantom menace and attack of the clones. But im confused as to what exactly jedi do, i know they practice the force and learn the philosophies, but are they like assassins? Or they go and find out information from mercenaries? Can anybody enlighten me.
So what do jedi do exactly for a job?

They mainly go on missions as bodyguards and diplomats. Protecting senators and other high priority targets when it is known that they are in danger or solving political disagreements to prevent wars. In times of war they can also fill the role of generals and special ops to undergo missions normal troops can't handle.
Basically they are warriors of peace. In an ideal world the training of lightsaber combat would be purely a matter of tradition and self improvement and diplomacy would be their primary focus, but they ultimately do all they can to maintain the stability of the galaxy by fighting for the Republic.
If you're asking where they get money, I assume they get heavy funding from the Republic coupled with things like donations and a mass of wealth they have accumulated over the millennia.
@themaximus: When they aren't doing those things, they are practicing/learning about The Force. The Jedi don't have families, save for the rare instances that they do but those are exceptions.

They pick kids at a very young age, mostly ones strong with the force.
IIRC, Anakin was turned down by the Jedi council for being too old, when he was 10 years old. Then Qi Gon-Jin took him as his apprentice. That's how he became a Jedi, otherwise no.

No, they are not allowed to have families or have any kind of life outside of serving the best interests of the Republic. It is expressly forbidden for Jedi to fall in love and marry.
However, Jedi are free to leave the order whenever they want.

They can just go and live a normal life. I'm not sure if they're allowed to keep their lightsabers or not, but regardless, if they ever want to retire, they can.
@themaximus: Depends on the era. Towards the movies the distinction was less prominent. But early on once they hit knighthood they like three areas of specialization.
Guardian: The combat specialists. They where pilots in the Starfighter corps, they patrolled a planet or star sector as a special police or they could stay at the temple as instructors.
Consular: They focused on more on study of the force and diplomacy. They where ambassadors, healers, lore keepers/ researchers things like that.
Sentinels: Are like the shadowy middle, they did the dirty work. Going undercover to handle crime syndicates or destroying traces of the sith. They also handle recruiting and guarding the temple.
Mostly move rocks, wave their laser swords around and make people do what they want them to do . Also Bit-mining.

The Republic are a multi-species government that spans most of the galaxy and hundreds, if not thousands, of different civilizations. Jedi don't fight other races, just enemies of the Republic like the Separatists in the Clone Wars era. Prior to that there had been no major wars in the galaxy for a thousand years.
