Fast enough to block Chitauri/Hydra/Ultron Bot blasters. If deleted scenes were allowed than be blocked Vision's mind gem blast which I believe was calculated at hypersonic.
But I don't think deleted scenes are allowed so that doesn't work. Still I'm pretty sure Malekith's tendrils moved faster than sound and Thor blocked them. I'd say Thor is high end subsonic to supersonic.
First, I think it's stupid to measure reaction speed - reflexes - in "mach" terms. Reflexes are a nerve thing, not a muscle one, and electrical impulses goes at something like light speed. You can't get much faster than "instantaneous".
Like courage, reflexes are part of the bread 'n' butter of any super-character permitting them to avoid, or react to attacks varying from a simple fist to a light beam. It makes little difference, really - about any heroes but the most massive ones can dodge an attack here and there, regardless of their levels, and nobody ever complains. This applies to everyone, cowboys as well as speedsters.
Coming back to MCU Thor; Thor's got enough reflexes to deflect energy blasts. That doesn't give him either combat speed, travel speed or even operational speed (the one type of speed where he is quite slow), but yeah, he can dodge about anything in any rational script.
