Fight begins with Vultron arriving with his horde and revealing himself by opening his helmet and ends with Thor pummeling what's left of it with Ultron nowhere in sight

Nah, it's more likely Vultron dumped a bunch of Ultron bots and left.

Since when is Vultron such a coward? Did he use the Time Stone to see Party Thor destroying his arm?

Yeah , Ultron's invasion of Party Thor's timeline seems a little bit too nice , I guess ? It looks like he just dumps a few hundred of his bots to mess with Vegas then Thor fought them off and that's it but didn't we see that he's willing to one shots entire planets with the power stone or send billions of bots at once to crush and overwhelm any planet in mere seconds ?

Party Thor > Ultron's arm durability > Galaxy busting explosion >>>>>>>>>>>>>>>>>>>Planet Busting explosion >>> Captain Marvel >= Party Thor.

Wait a minute.

I kind of thought the ending of the party Thor episode was non canon in some way.

It also featured Watcher acting surprise to see Vultron despite having to have fought and lost to him

The ending to the Party Thor episode doesn't really line up with ep 8 . I thought it was just a small addition added to tease an Ultron episode before episode 8's story has been fully realised.

There's no point for Ultron to dramatically reveal himself before Thor and not just kill him right there.
