What character had the more complex and cooler build up for the movies, was it the MCU Thanos or was it The X-Men movies version of Apocalypse, who is the more interesting villain?.

This. Apocalypse solos everyone present in the Endgame final battle as well. The only survivors would be the chosen horsemen.

Thanos no contest. Apocalypse was just powerful, but offered little else to be a compelling villain. They went the generic villain route with him unfortunately. Thanos is unique enough that people debate about him and have a variety of views on him. Apocalypse can be summed up with a sentence or two and people would move on.

Apoc was boring.

He was basically doing what Magneto wanted to do in the first 3 X-men except he had no character.

Lmfao Thanks by a landslide. Thanos is already one of the GOAT villains of all time. As a Apocalypse fan his movie incarnation was an insult to his fan base.
