A single borg was capable of overwriting the security codes and hack the enterprise, what the hell is Ultron going to do against a collective with the knowledge of hundreds of civilizations, that can time travel or literally just blast the shit out of us from orbit?

It's not a battle, it's who the bigger threat. Both would be unstoppable, but Ultron's ability to turn the internet against us makes him more cruel I guess?

I'd rather die than be assimilated. Borg are the bigger threat.

The Borg easily, both are big threats but the Borg are capable of a lot more.

This isn't the comic Ultron though. It's MCU Ultron who is hardly evil by definition. He's literally just a child who is misguided and deluded.
