Thanos would win this. He would find something to screw up Doom with. Doom would have to come at him with pure magic then maybe he would win. Two years prep is a lot of time to prep for a fight. Thanos would more than likely grow tired of preparing for this encounter and go do something worthwhile, like amass enough power to make another bid at taking over the cosmos.
