Cosmic Cubes are inferior to both Celestials and Eternity.
With that said, Thanos more or less became the universe with the Cosmic Cube. However, given this he is still not more powerful than Eternity.

Has that actually been stated that they were created by Eternity? As far as I know their exact origins have always remained a mystery unless you want to say Fulcrum created them(which he did in a sense). I think the Celestials have also been credited with helping to create the MU.

IMO, seems more like Eternity summoned the celestials rather than created them.

The origin of Celestials, contrary to popular belief has never been explained. There are other hints, during Eternals volume 4 it was hinted that Celestials were created by an unfathomable all powerful being called the Fulcrum.
Other stories, for example X-Termination seem to suggest something widely different, albeit inconsistent to what has been accepted of Celestials. The story showed that Celestials existed before the creation of the multiverse and they were in fact the creators.
There are a lot of contradicting theories there friend, i am hoping you will find some of these helpful =)

I'm pretty sure a cosmic cube ain't got nothing on galactic but two in the hands of Thanos can definitely be a problem

yes it does. When it comes to using cosmic items, i've never seen someone with better manipulation skills than Thanos, Adam Warlock and Silver Surfer, and specially Thanos, who proved to master the use of cosmic cubes better than Dr Doom and Reed, he also mastered the Heart Of The Universe in seconds when an entire race of advanced aliens and a human pharaon couldn't do it in thousands of years.

Thanos with the Cosmic Cube became everything in the universe. However, that does not necessarily put him on par with Eternity. In fact, from what we know about Cosmic Cubes he would still be leagues below Eternity regardless.
Thanos wins in a decent fight. Though I do find it odd that Kubik expressed inferiority to Celestials to Nova yet Galactus has shown to be more powerful than what I would assume is an average Celestial when he oneshotted one while fighting alongside Franklin.
One Cosmic Cube is a universal level object at best is what I'm getting at. Whereas Galactus and Celestials are multiversal level.
