We haven't seen the upper limits if the shining stars[sister, witch, Valkyrie(who is still featless), hermit] but until then kata stomps them all.

Shiki should win, even though he lost, being able to fight Sengoku and Garp at the same time is a hell of a feat.

Shiki at his best was Fleet Admiral tier likely right below Roger and somewhere close to Sengoku. He should win this without much trouble.

Shiki held out against Prime Garp and Sengoku for three days, that’s a feat only a character near Roger’s level can accomplish (though only half of the island was destroyed indicating Garp and Sengoku were holding back to a degree to limit Marine death toll, it’s still a great showing for the Golden Lion) so Katakuri should get stomped on paper.
