Anakin didn't fodderize Dooku. The entire Invisible Hand duel is sequenced in short bursts; the majority of segmented engagements within the fight are 4 seconds and under in length. Dooku's final battle with Anakin is the 2nd longest fight in the scene, 9-10 seconds. So, within the context of that fight, Anakin only defeated Dooku after a reasonably long duel. On top of that:
- Dooku was overconfident(as per Nick Gillard, in the Making of Revenge of the Sith)
- Dooku wasn't trying to kill Anakin(as per George Lucas, in the Making of Revenge of the Sith)
- Dooku was exhausted(as per the movie script)
- The fight was stated multiple times to be "intense"(as per the movie script)
- The fight was close enough that Dooku though he was still winning up until he lost his hands(as per the Complete Star Wars Encylopedia, and the old Star Wars.com Databank)
Anakin overcame an exhausted, holding-back, and overconfident Dooku in a lengthy, closely matched fight.
And, Dooku isn't equal to Sidious, he's slightly inferior.
