Who wins and why?
Berserker unless Shirou can get UBW fast enough. I don’t think Shirou can figure out it is Lancelot and recognize any potential weakness unless Lancelot fully summons Adronight. There is also the fact that Lancelot ability to make anything he touches into a Pseudo NP makes him the natural enemy of Shirou and Gilgamesh. Lancelot also outmuscles him and even skill in his Berserk form. UBW won’t be a complete utter win either if Shirou is only willing to throw several NPs at him once at the times. It would be a complete different story however if he did the same thing Miyuverse Shirou did and launches the entirety of his arsenal at Lancelot. That would guarantee an overkill and there is no way Lancelot is countering that, regardless of his NP: A Knight Is Never Unamred? (Not sure about the name, but something along this line)
Then again, Broken Phantasm is a thing. Multiple broken Caladbog to the face is also an overkill. Best thing is Caladbogs would most likely explode before Lancelot has a chance to tough them. And hell, even one is enough given that it took Berseker life. And it is not exactly smart to go CQC with a Berserker class. Someone like Shirou should be more than smart enough to know this. So then it would depend on whether Shirou can gain distance and one shot Lancelot or not
@sivil-law: The only reason people are saying Berserker Guts would be enough. Is because they saw less than half of the Berserk manga and no absolutely nothing about Emiya. Even current Guts would struggle to fight against an opponent who moves at around the speed of sound or exactly at it. Guts at his best is probably at Mach 2 or 3. Emiya can track things moving at Mach 10+ Guts will never hit him.

This has nothing to do with the Berserk series. A character from the Fate series is named Berserker.
