Gojos infinity is neither "probability manipulation", "luck manipulation", "motion control" (this is me taking your descriptions at face value) or any other technique in toriko. It functions completely differently, so you cannot assume midora is somehow able to copy it as he has never been shown to do such

Midora obliterates with minority world,back channel or even Meteor spice.

Meteor spice specifically will bust the planet.

Also gojo's abilities are space manipulation on sub - atomic level! Back channel alone deal with him
