Thor can't put Colossus down. One good hit from Colossus is more than enough to put down Thor.

Cap's shield was supposedly unbreakable in the MCU jet Thanos cut it whit his blade. SB is sharper and more durable than Thanos double-blade, so Stormbreaker could possibly cut Colossus skin, in similar way as Wolverine's claws can.

Colossus is mid high tier in the 616, which in my opinion is a large step up from MCU high tiers. I'd put him comfortably over MCU thanos without all the gems and of course, thor

Onto the theme that matters. Colossus is a lot stronger and a LOT more durable than MCU Thor, so if the latter has literally no way of inflicting even a tiny insignificant amount of damage via SB, then this fight is pointless. And by extension, you are pointless.

So, for the sake of the thread I make an assumption that cannot be fully proven nor refuted: Stormbreaker can cut Colossus. The Russian brick is not invulnerable and has been wounded before, so sure. Why the heck no?
