Maybe 1 if he's close enough. But Idk how well a celestial would resist the power stone if it was used to planet bust. 6 is the safest bet since they'll probably start a good distance away from each other and snapping an opponent away ignores durability.
A newborn Celestial can violently destroy a planet and no sell it. So they are bare minimum planet level physically. We see them create stars and galaxies as Arishem is doing his monologue as well. I would say he would need at least the power, space, reality, and time stone to beat one. Probably would need 5 to defeat one.

He didn't even have time to use any of them agaisnt Ultron because he got blitzed. So not really a fair comparison.

The Stones dont effect the celestials, thanos could try to do with what strange did and make a time loop in case he dies, but whats to say arishem cannot just one shot him before he could react?
According to a VFX interview, Arishem was responsible for causing the Big Bang. It was also said that he created the first Sun and brought light across the Universe. These statements, along with the fact that we saw Celestials create stars and galaxies on screen, puts Arishem on another level. Also, due to him existing before the Universe, he should transcend Space-Time. That would make Arishem 4-D at the very least. This means that the effects of most Stones would be ineffective, therefore Thanos would need all 6 Stones at most.
For those who don't know, Arishem predates all Celestials, which have been stated to exist since before the dawn of creation and the singularities that led to the creation of the Infinity Stones, an event which was a consequence of the Big Bang he himself created. Given his status, he should scale above all Celestials, who uses their cosmic energy to create suns, supernovas and black holes.
In terms of durability, a newborn Tiamut would have no-sold the Earth's destruction upon birth, Eson no-sold the Power Stone wave that went on to destroy a planet, and Hargen, Nezzar, and Jemiah were unaffected by the gravity, heat, light and radiation of suns. Arishem himself no-sold a black hole and held the Big Bang in his palm.
In terms of speed, he's Massively FTL+ as Celestials can cover stellar distances with just their sheer size. Hargen, Nezzar, and Jemiah showed they could travel across solar systems in mere seconds.
In conclusion, juvenile Celestials are Planetary, adult Celestials are star-galaxy level, and an elder Celestial like Arishem is Universal via creating and no-selling the Big Bang.
AS for abilities, here is a list of Arishem's thus far.
Cosmic Energy Manipulation &Creation: Created planets, suns and living beings. Created the first Sun and the World Forge. Created golden rings around of Sersi, Kingo and Phastos when he came to Earth.

Memory Manipulation: Erased the memories of the Eternals after each Emergence.
Size Manipulation: Arishem can appear as small as a planet or so large that he's capable of dwarfing stars.
Weather Manipulation: His appearance near Earth generated massive storm clouds he then casually parted.
Shockwave Inducement: Generated a powerful shockwave that knocked everyone aside down aside from Sersi when he came to Earth to take the remaining Eternals.
Explosion Manipulation, Space Manipulation and Time Manipulation: Caused the Big Bang.
Antimatter Manipulation: The ball of energy Arishem used to cause the Big Bang contained elements of antimatter and dark matter.
Power Bestowal: Granted his powers to the Eternals and the Deviants when he created them.
Flight: Has no issue maneuvering in space.
Portal Creation/Pseudo-Black Hole Creation and Teleportation: Of himself and others, can open wormholes in the shape of a black hole to teleport.
Cosmic Awareness: Was able to sense the death of Tiamut.
