Round two is more interesting, but Ego wins eventually.
Keep in mind that the Guardians only managed to take down Ego because there were a large number of very specific factors in play that benefited them. Ego didn't want to kill Star Lord and was holding back as such, he was emotionally invested and distracted by his family drama, the Guardians knew where his one and only weakness was only because they had been told such by Mantis (who only knew because she had worked for him for years) and he was asleep for half the fight (again courtesy of Mantis who could only do that because he had been allowing her to for years). Just look at what he did to the entire Sovereign fleet to see what sort of feats to expect when he doesn't care to hold back... and that feat was just his Avatar, light years away from his power source on his planet, just to show off to Quill. It's stated in GOTG V.2 that Ego is capable of matter manipulation on a molecular level, he demonstrates powerful feats of energy manipulation, and he is shown to be able to manipulate his entire planet at will. His upper limits are indeed celestial.
It should also be noted that MCU Surtur doesn't demonstrate a big enough feat of destruction to prove he can come anywhere close to killing Ego... even if he could discern that he needed to attack the core in order to kill him (which is unlikely... It's far more likely he is left fighting Ego's Avatars and giant constructs, and simply thinks that Avatar Ego is the real ego and he has the power to control the surface... which would also be attacking Surtur). Surtur destroyed Asgard with his sword, but Asgard is shown as being not much larger than a very large city or a very small country. Ego by comparison is statedly similar in size to Earth's Moon... which is to say MUCH larger and MUCH MUCH deeper. Surtur's sword would never be able to get anywhere near the core simply by stabbing down as he did on Asgard. He'd have to physically dig his way downward, and as a consequence would become surrounded on all sides by a planet that would be trying in every way to constrict, consume and crush him... and those are just the physical attacks from the planet itself, not the extremely powerful energy blasts he would likely also be experiencing (or the possible matter manipulation powers ego could use on Surtur himself... who's to say Ego doesn't just do something to Surtur's internal chemistry or biology to make his organs explode? We already know he's capable of cellular manipulation as he gave Quill's mother a brain tumor at will).
We know that MCU Odin managed to defeat a full powered Surtur, so it is possible to do, and I imagine Ego would be far faster to find a way to do so with his large variety of attack options than Surtur, who would have no idea where to even begin to attack Ego, even if he realized that Ego was indeed the planet itself. If he doesn't hit the core, Ego can simply regenerate or replace the parts of the planet's surface that Surtur destroys. Unlike Asgard, the surface of Ego would be moving to avoid strikes and counter attack against them, as the planet itself is controlled by a sentient entity.
Giving this one to Ego both rounds. Round one almost instantly, round two with a bit of difficulty (I can see Ego getting annoyed... but unlike with Quill who he needed alive this is probably just going to make him strike far harder than before to destroy what he will see as a giant fiery affront that deserved to die for daring to attack a Celestial)
