Who wins and why?

As big of a fan of Sunny as I am, I'm gonna give the majority to Elektra 6/10

She's faster, as strong/if not stronger than Sunny, and she has more than enough skill to hold her own in that regard. Durability wise, I'd give Elektra the edge for taking hits from the Iron Fist, Jessica Jones and an SUV

The only thing I give Black Sky over Sunny is durability (don't get this confused with endurance/stamina). Her speed was laughable considering Daredevil was able to not only keep up but get in many shots of his own -- attacks she couldn't block or evade. Her strength wasn't that impressive, either, since majority of her strikes didn't put Matt or Danny down for good (like they should have).

Sunny takes both rounds. Quinn and Widow are tougher fights than Elektra IMO, and Sunny beat both of them.

I think Elektra might be too fast for him if she isn't jobbing/holding back/whatever.

Sunny also has insane striking strength but does not 1 shot everyone

So honestly, I can say the same things about sunny as you said of elektra, but I prefer to use critical thinking. It tells me that daredevil (you know, the guy that catches arrows and flips around automatic gun fire?) is fast and skilled enough to keep up with elektra.

Danny himself has dodged a couple of bullets and tranq rounds, so he's not slow either. Them not getting instantly fodderized doesn't mean elektra is slow

As for her striking power, the woman drew blood from Jessica jones in 1 hit, back handed murakami 15 feet away and has more feats of kicking people 20+ feet away, so the fact that matt and Danny didn't get 1 shot speaks to their durability

Agreed. After watching second season, Sunny is way more impressive and battle better foes like them Black Eye guys IMO.

Sunny, more skilled with Swords and faster, Black Sky has a physical advantage but it won't save her from Sword slashes.

I won't disprove more skilled, but how is he faster? He has absolutely no feat to date that matches Black Sky's 10 ninja feat.

Because we've seen Sunny take on several swordsman and deflect their strikes simultaneously, we don't know how Black Sky took out the 10 Ninjas, she could have just one shotted them with a sword strike or she could have done the same as Sunny, but since we don't know we can't assume. Deflecting strikes from multiple skilled fodder at once is superior to taking out a lot of fodder in a short amount of time imo.

If we actually saw the Black Sky feat she probably would be faster than Sunny for sure.

Based on my knowledge, EoS Sunny wins.

Elektra scales above bullet timers like Bushmaster and Defenders Danny Rand, plus she has her own feat of delfecting a bullet, so she is certainly faster. Her feats against Luke Cage and Jessica Jones also surpass anything that i've seen from Sunny strength wise.
