Mace Windu and Count Dooku vs Darth Maul and General Grievous (pre force crush)

All of the characters here are in their prime; can the superior skill of Windu and Dooku win out, or can the ferocity of Grievous and the wit and speed of Maul give them the majority?

Mace beats Maul, Dooku beats Grievous

If Grievous can engage Mace quickly, he can probably beat Mace in the same amount of time or possibly even more quickly than Dooku can beat Maul. It's dependent on his ability to close the gap between them relatively quickly though so I'd generally favor Team 1.

Windu and Dooku obviously.

Team 1, mismatch

Whoever you put Dooku on is getting handled quickly. Mace hard counters Maul and would still be a grueling battle for Grievous.

Either of team 1 can beat either member of team 2 imo.

This is canon where Mace win over Sidious is legit. He wrecks:

Team 1 decisively. Maul is a weak link against either opponent and Dooku would beat Grievous every time through knowledge of his fighting style, having mentored him and not being afraid to use the force against him.
