I know making Manga/Anime fights really isn't my thing but I had this fight in mind and thought it would be a pretty interesting one.

Itachi outhaxxes, hendy doesn't have any defence against any form of genjutsu on itachi's level, or totsuka blade.

And itachi can wall any of hendy's attacks with susano + yata

OT: This really could go either way. Itachi is a very proficient fighter but Hendy has the speed to avoid him and if he tires out Itachi then thats most likely going to be it for him. However, Hendy doenst have anything to get trough Susanoo. Itachi wins high-diff

@dalastuchihaman: Hendy uses Dark snow, dead end and black nebula and itachi dies.

@uchihaghost: Verse isn't equal and Hendy doesn't have a chakra network to get hit by genjutsu. Hendy have the better hax and this version of Itachi is more likely to use genjutsu, fire style and cqc. Genjutsu not going to work, fire style isn't either and in cqc Hendy is physically stronger and have hax that kill immediately (dead end and black snow). Black snow is an aoe too. Just don't see how Itachi going to win this.

If Hendrickson had prior knowledge of Itachi's abilities, then he would win, but with no prior knowledge, he loses due to Genjutsu.
