He's not fodder. Clark would most likely win post-amp, but it's not like Thor is going to go down easy or anything. No one side is stomping the other. Hell, even with Stormbreaker, I'd marginally back Clark due to the speed.

He'll last in a fight for a while, but Supes punches harder than him without a weapon and is much much faster and can fly.

Lmao, yes, he most definitely is a threat. Without Speed Equalized and without a weapon Superman would win, but Thor is most definitely a threat to him even without a weapon and without speed equalized.

If Clark were to fight stupidly and not use his advantages of flight and speed, yes, Thor would be a threat.

Ragnarok Thor is grounded-- not that Thor ever really use his advantage of flight in a fight, anyway. But Thor's best chance would be hitting him with lightning and dazing him, then finishing him off after that, but even then Clark has better recovery speed than Thor does, so he'd be back at full potential moments after.

Why are there so many Superman (DCEU) vs Thor (MCU) threads?

Probably because superman [PC] vs Thor [616] threads have been exhausted and the heaviest hitters from these two franchises keep getting new feats with every movie. Its just a reliving of the debate in full force with different versions who're relevant.

Movies are also a lot more accessible than looking at dozens of comics for continuity and context.

And Superman is fodder to Thor with equalized speed, at least Thor can take more than 20 hits from Superman meanwhile Thor just has to swing Stormbreaker once.
