She can probably stab Thanos if she gets a clean shot at an unarmoured area. She's not getting past the infinity gauntlet beam if she gets pushed back by Doomsday's heat vision.

Assuming this is a real fight, and not just Thanos taking shots from Diana, I fail to see why he can't just snap if he has the completed gauntlet.

She could definitely cut him since Iron Man could but this post seems like an actual battle? If Thanos is fighting back at all, he wins by snapping. Even if he didn’t snap, he could still: alter time, freeze her in space, turn her into ribbons or stone or bubbles, control her mind, hit her with a huge wave of the purple stuff from the Power Stone, or do whatever the Soul Stone does.
