And Granolah and Gas are two guys which are stated in terms of power equal to the saiyans or maybe a little bit stronger

Vegito/Gogeta Blue Evolution, Blue Kaioken or Blue Evolution Kaioken (maybe UI or UE) must be definitely more powerful and strong than Beerus no matter what

It was also stated that Gas is now the strongest being in the universe which should put him above Beerus by default.

Only for Granolah case as for Gas he was pretty much confirmed to be the strongest being in the universe not just the strongest mortal

Either would solo if they have full access to their powers. The problem is that neither still has access to their full powers.

It's currently unclear what Gas can really do, given that he recently mastered his newly unlocked powers. But Beerus is still above current Granolah. I'd reserve judgment until the next chapter.

Beerus curbstomps Granolah. It will not even be a close fight. There's a reason why the narrative puts effort into the making the distinction that Granolah wished to be stronger than all the mortals (as opposed to saying than "everyone"). This implies, in a very conspicuous way, that Granolah is still below the power of the GoD in the universe, as the dragon balls cannot transcend into the power of a GoD, particularly one as incredibly powerful as Beerus (possibly the top dog in that category).

Frankly, people think Beerus cannot be possibly that powerful because he got one-shotted by Whis and struggled with SSJ God Goku. The reality is that Beerus didn't realize anywhere his full power in either scenario (especially in the former, where he got one-shotted by Whis; he was probably not even 0.001% of his power in that moment, because he did not power up and he had just been eating, distracted by Wasabi). If Beerus used 100% of his power, it's very possible that he would give Whis a good fight, maybe seriously pushing him some of the times. It's already been established that Beerus one-shotted Blue Evolution Vegeta, which obviously means he'd do the same to SSJ God Goku.

I will say again that it is very important to consider the context of every scene. When Whis one-shotted Beerus, the latter was distracted and his power was not even 1% of his max, kinda like a grizzly bear that just woke up from a nap, yet is being met with a pride of lions as opposed to something less intense that would be a better warmup. In that case, Whis is the pride of lions; the bear (Beerus) could conceivably give the lions a very good fight if he had not been groggy from waking up, but being attacked in its sleep will result in a loss.

A Beerus that is as distracted, depowered, and limited as he was when he ate the wasabi could have probably been one-shotted by Ultra Instinct Goku as well. Obviously, a Beerus that is in a battle and given a chance to actually power up will give Ultra Instinct Goku the fight of his life, possibly killing him.

Beerus literally was holding his own against Gods Of Destruction Gas and Granolah get hakai'd

Beerus is a different tier even in his own G.O.D category. Even Black Frieza who trained for 10 years in other dimension would likely still be below Beerus and he's still powerful enough to one shot Jiren, UI Goku and UE Vegeta simultaneously.
