Metal would melt inside the star. Therefore it isn't the traditional metal that Magneto is capable of controlling. The movie directly contradicts the comics, and the process used to create Mjolnir; therefore, Magneto being able to control it in the comics has no relevancy within this thread.

Iron, out of the ground, melts at around 1510 degrees C (2750°F). Steel often melts at around 1370 degrees C (2500°F). Therefore, it isn't the traditional metal found on Earth. Magneto can't control it.

Uru is a metal. It's a type of metal just like gold, copper, titanium, and tungsten. Some metals have a higher density than others. Uru has one of the highest densities (much higher than anything on the periodic table), which is why it is able to withstand the heat from the star.
