Xavier makes and arrangement with Mephisto to have all hell break loose during the match to keep GR distracted long enough for him to rearrange the chess pieces. He also packs a few chess pieces under his cushion.
One hour into the game Bruce notices that half his chess pieces are of a different kind, but doesn't say anything as he feels sorry for Xavier.... (Bruce remembers that was loosing anyway, and figures Xavier does it because he gets off on the rush).

But before Mephisto makes all Hell break loose, Jean Grey comes back from the White Hot Room, now Dark Phoenixy-er than ever. She sees Mephisto about to carry through with his plan, so she decides to destroy him just because she's really pissed off at everything. Hell doesn't break loose. Batman doesn't get distracted. Chess game continues with no cheating.
A game of chess favours Bruce, as a master detective his intelligence more so leans towards things like figuring a person out and thinking ahead. Although Xavier strikes me as the type to play a lot of chess, I think Bruce's lifestyle makes him more suited to a game like that.
