I have never saw Goku or any Saiyan for that matter get bitten by a Vampire before. Can they get bitten by a Vampire? If so, what will happen to them? Will they get turn into a Vampire too?

No. Ki defense specifically protects against bladed weaponry, unless Vampires have specific ways to ignore such defenses. Or maybe use hypnosis to daze Goku then bite him. It depends on the vampire really.

It would have to have better piercing power than a bullet and that would be base goku without any ki defense.

I would assume vampires have better piercing potential which is why I argue that the only way a saiyan is getting punctured by a vampire is if his defenses are down.

Depending on the vampire their bite could well be beyond bullet level. Superhuman strength is a common vampire ability and the degree of that strength can vary wildly from setting to setting.

Not if he does not want to get bitten. If he is not paying attention, that's a whole different story.

Depends on where Goku puts his ki level because even as a kid Goku was using ki because he couldn’t control it so it defaulted into being his power level of 10. You could see this with Vegeta and Nappa when they arrived on earth, they didn’t know how to lower their power level so they just stayed at their strongest without powering up or lowering it down.

If Goku powered his power level to that of 5 like a regular human he would get killed by bullet but if he put it at 10 like his kid self it hurts but it wouldn’t kill him.

So it depends on where he puts it.

Easily. Superman gotten bitten by a vampire twice in DC Comics despite his Kryptonian's bio-aura protecting his already steel like skin. Vampire is made out of magic which Goku doesn't have defense for. What he has is Ki defense which is not the same thing as Magic. Off-guard or not, Goku's skin will get pierced by a vampire's fangs regardless.
