Top of the bunch has to be Kirby's original New Gods saga. Seriously, kids, check that stuff out!

I also recommend Walt Simonson's run on Orion....though Darkseid isn't in every issue, he plays a big part.

A lot of good Darkseid stories for the greatest DC villain ever

1) The Great Darkness Saga

2) Jack Kirby's entire 4th World Saga

3) Grant Morisson's Seven Soldiers of Victory (mostly Mister Miracle) and Final Crisis

4) Justice League 23.1 Darkseid

5) Orion

6) Rock Of Ages

7) Cosmic Odyssey (it has a lot of problems but it's still great mainly to Mike Mignola's artwork)

Avoid the New 52 Justice League origin arc like the plague if you want to see a well written Darkseid.

Can't go wrong with Rock of Ages.
