Both were great, but I feel Apocalypse was a real missed opportunity to develop Quicksilver: The DoFP scene sold what he could do, Apocalypse had the opportunity to take that and actually do something with it. Imagine if, rather than just racing around the explosion yanking people out of the way, playing around, the song choice was more somber (though not being familiar with that age/brand of music, I don't know what it could be), he actually WASN'T fast enough to save everyone, and was frantically racing to grab everyone he could, actively struggling against the explosion, his clothes even getting burnt or charred from the heat as he literally stays one step ahead. Rather than him just going, "Wow!" after the end, he's collapsed, out of breath, unable to even stand, and has to deal with the fact that as fast as he was, he wasn't fast enough.
Plus, that'd make the followup scene with Stryker, where Quicksilver had more than enough time to stop them, but didn't, make more sense.
Though given the movie was already stretched kinda thin, that probably would have been just a plotline that would've had to be left hanging, so maybe they made the right call.
