Would he be a Bounty Hunter, working for the Rebels or a fearsome Vigilante that scared the hell out of the Empire?

A relative scrub. If you mean in the context that he's a Bounty Hunter and/or Jedi, I suppose he'd grow to be pretty high.
Well you have to take into account batman's upbringing, growing up rich in gotham the most likely star wars alternative would be growing up in some rich empire controlled planet right? like a senators son or something. Him going against the empire seems pretty unlikely in this context. He'd probs be for law and order like he is in the DC universe, and the Empire sort of represent order in their universe.
@lensnart: Nah, there are plenty of worlds where one is rich, not nessecarily having to be Empire controlled. If we take the city of Gotham, it'd just be some city on some world where at best their tech level is on the Information Age IE: Not having found the secrets of hyperspace travel, limited to their own system, sophisticated communication devices(for their world).
Though said planet wouldn't have space based weapons or snub-space starfighters.
However the Empire would probably want to make normalized relations with said planet, which would lead to trade hubs so Bats could most likely make some nifty tech depending on what he is given.
