This depends on so many factors, how big are the guys (or girls) fighting? Slim? Short? Tall? There are so many variables to consider but out of bias I'd go with the boxer.

Completely different forms of fighting.
Wing Chung is a more versatile martial art IMO, whereas Boxing is no flaw game or throws; but is a very good up game martial art.
Ultimately it depends on the fighter, or who they have been taught by; generalising the whole martials arts, is not an accurate way, other than people expressing there own opinions.

But a skilled wing chun schools boxer more often than not.
